About us

A house named after one pastry.

French pâtisserie in Dubai. Pastries & sweets, made by hand, every day.

The name

Why Forêt Noire.

Forêt Noire means black forest. It is the name of a pastry: chocolate, cream and one cherry. We draw it as a tree stump with the cherry on top, and it is the first pastry in our case.

A Forêt Noire has nowhere to hide. If one of the three is ordinary, you taste it. We put that pastry’s name on the door, and we make everything else by the same rule.

What goes in

Fruit, cream, real vanilla, and hands.

  • Fresh raspberries on the Raspberry Tart, very close

    Fruit, bought fresh.

We buy the freshest berries we can find, every kind of fruit, and fresh cream. A pastry is only as good as what goes into it.

  • The cream of the Mango Cheesecake, very close, with the small black dots of vanilla in it

    The black dots are vanilla.

Some guests ask about the small black dots in our cream. They are the seeds of the vanilla pod: real vanilla, not a powder. Powder leaves none.

  • The piped cream on the Caramel Pécan, very close

    Finished by hand.

Each piece is made by hand, daily. The piping, the glaze and the one cherry are put on by hand too.

Who makes it

Seven to ten years at the bench.

Every pastry chef in our kitchen has spent seven to ten years at this work.

The house itself is tied closely to France, Italy and Spain, and French is spoken in it. The craft is French pâtisserie; the kitchen is in Dubai.
